Vegetables for roasting with chicken (for the bottom of the pan)

  • 3 medium carrots, cut in large 2” chunks
  • 1 medium yellow onion, cut in quarters
  • 7 medium Yukon gold potatoes, halved 
  • ½ tbsp olive oil
  • ½ tbsp poultry seasonings

For roasting whole chicken in the oven 

  • 1 whole chicken
  • 1 tbsp olive oil
  • 2 tbsp poultry seasoning
  • ½ lemon for stuffing the cavity
  • 1 tbsp butter, for broiling to make crispy skin at the end 
  • 1 tsp cilantro, fresh chopped for serving

How long to roast a chicken

This recipe for oven roasted chicken cooks pretty quickly. It will be ready in about 60 to 90 minutes. ​​Allow it to rest for 20 – 30 minutes after cooking.

  • The chicken meat that touches the bone is no longer pink
  • The juices run clear when you cut into it.
  • The internal temperature is 165 degrees F (as measured with an instant read thermometer inserted into the thickest part of the thigh).

Quick look at roasting a whole chicken

Here is a quick look at baking this homemade roasted chicken:

  1. Season the whole chicken and vegetables.
  2. Add chicken, potatoes, and vegetables to a roasting pan or tray and place in a preheated oven.
  3. Bake until chicken is fully roasted.
  4. Broil to crisp the skin.

Detailed recipe steps…

  1. Preheat the oven to 375 degrees F. 
  2. Make the whole chicken seasoning blend (it’s also what you’ll use for adding flavor to the veggies) by stirring together all the spices. Set aside. 
  3. Toss the chopped veggies with olive oil. Add seasoning blend and toss with large spoons until well seasoned. Set aside. 
  4. Remove the whole chicken from the bag and remove the insides if they are present. Pat the whole chicken dry with paper towels. 
  5. Coat whole chicken all over with olive oil. Generously apply the rest of the seasoning blend left over from the veggies. Rub it on all over the skin, in every crevice and sprinkle some inside the cavity, too. 
  6. Add lemon to the inside of the chicken cavity if desired.

  1. Set out a rimmed baking pan. We like to use one that’s shallow, but can hold veggies and juices from the chicken as it cooks. The one in the Sip Bite Go demonstration is about 9×13 and has a 2” rim. Set a piece of parchment paper on top if desired. 
  2. Add the vegetables in a flat layer on the chicken roasting pan. Add a wire rack on top to hold the chicken. Or skip using a rack and instead put the chicken directly on the vegetables. Either way, add the chicken on top. 
  3. Roast whole chicken in the oven in the center rack at 375 degrees F until internal temperature reaches 165 degrees F as measured in the thickest part of the thigh. Juices of the chicken will run clear and there will be no pink inside the chicken. In the Sip Bite Go demo, this step took about 90 minutes.  
  4. Remove whole chicken from the oven. Now it’s time to crisp up the skin and turn it golden brown. 
  5. Set broiler to high. 
  6. Rub 1 tbsp butter all over top of chicken, it will melt into the skin. 
  7. Broil whole chicken 2-3 minutes or until outside is beautifully browned. 
  8. Remove whole chicken from oven and rest 20 minutes or longer if you have time to help the juices settle. We usually do not cover it in aluminum foil. 
  9. Carve and enjoy.

FAQs 

What size chicken should you get to roast in the oven?

Most whole chickens are about 2.5 to 3 pounds. Depending on the bird size, your roasted chicken may cook a bit faster or slower than the Sip Bite Go demonstration. Cooking time will always vary slightly, so I highly recommend that you use an internal read thermometer to check for doneness. 

Can you use any spices in place of the roasted chicken seasonings?

Yes – a lemon pepper blend, BBQ rub, or any poultry blend you have can be used to season the whole chicken before roasting it. You could also keep it super simple with just salt and pepper as your seasoning.

Does it matter if you roast a chicken at 350, 375, or 400 degrees F?

You may get similar results, but I find roasted chicken at 375 degrees F makes it just right for a juicy and tender inside. Broiling chicken topped with melted butter after roasting means that you can quickly get a nice, crisp chicken skin.

How do you get crispy skin on roasted chicken?

The secret is to keep the skin as dry as possible. Which is why in the Sip Bite Go recipe, you’ll see one of the first steps is to pat the skin dry. And finally, you’ll finish this roasted whole chicken recipe with a few minutes in the broiler for a final, golden brown touch.

Do you need a roasting pan to cook this whole chicken?

If you don’t have a roasting pan, you can use a sheet tray with a rim, or a rimmed baking sheet. You’ll want it rimmed so any juices that come out of the chicken will stay with the vegetables roasting under the chicken and not make a mess in your oven. Those pan juices make the veggies super tasty.

What should I do with roasted chicken leftovers?

One of the many benefits of cooking a whole chicken is that you’ll likely have leftovers for the next day. So the following day, you could easily use the chicken breasts and/or dark meat to make chicken salad in less than 15 minutes. Or you could toss any leftovers into a taco for a chicken taco night. Be creative and be sure to use any leftover meat.

Meat thermometer recommendations

Every home chef needs a reliable meat thermometer to cook food perfectly. 

On Sip Bite Go, you’ll often see me using:

  2. ThermoPro digital thermometer – which has a wire that connects the thermometer to a display box outside the oven/grill. 

It’s like being psychic! The great thing about either of the thermometers above is that I don’t have to take the food out of the oven to know the temperature. 

How to use ‘em… What I do is stick the digital thermometer in steak, pork, chicken, whatever… Then put the food in the oven, on the smoker, or grill.

While the meat cooks, it reads the temperature so I know exactly what temp meat is as it’s cooking. Without having to take it out and check. It’s really difficult to overcook food when you know exactly what temp it is inside!
