For the apple bread mini loaf recipe base

  • ⅓ cup butter + more to line pan
  • 6 granny smith apples 
  • ⅓ cup sugar
  • 2 eggs
  • ½ tsp vanilla extract
  • ½ tsp cinnamon 
  • ⅓ cup milk 
  • 1.5 cups flour 
  • ½ tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt

For the apple cider icing

  • ½ cup powdered sugar
  • ¼ cup apple cider

Apple Bread Mini Loaf Batter in a mixing bowl
  1. Preheat oven to 350 degrees F. Set out 8 mini loaf pan and line it with sheets of parchment paper cut to size so mini apple breads don’t stick.
  2. Add a small slice of butter to the bottom of each parchment paper lined mini loaf.
  3. Use a stand mixer (or hand mixer and a large bowl) to beat together softened butter and sugar for about 1 minute, scraping down the edges with a spatula, until combined.
Using a Kitchenaid Stand Mixer to make Apple Bread Mini Loaves
  1. Add eggs slowly, whisking at the same time, until combined.
  2. Add milk, vanilla extract, and cinnamon. Beat for about another minute, until combined. The mixture will be very liquidy at this time.
  3. Add in fresh diced granny smith apples. Stir to combine.
  4. Sift flour, baking powder, baking soda, and salt over the wet apple bread mini loaf ingredients. Stir to combine into a thick batter.

  1. Evenly spread the apple bread mini loaf mixture into the mini loaf molds.

How to make the apple cider icing topping…

Making Cider Icing
  1. Add powdered sugar to a bowl. 
  2. Slowly pour in 1-2 teaspoons of fresh apple cider into the powdered sugar, whisking to combine. Add only as much apple cider as needed to get the desired consistency. I like it to be similar to pancake batter.
  3. Drizzle apple cider icing on mini apple bread loaves as desired.
